Instructions
  1. Cut eggplants in half inch slices, wash thoroughly and sprinkle with salt; let salt soak for at least 1 hour (not considered in total cooking time) to absorb any bitterness, skip soaking with salt if eggplants are not bitter

  2. Coarsely chop onions and soak in water for at least 10 minutes

  3. Coarsely chop jalapenos, mix with tomatoes and grind oregano; blend with immersion hand mixer

  4. Coat mini baking dishes with olive oil; wash salt off eggplants, layer eggplant followed by sliced cauliflower, cover with tomato sauce and repeat layers of eggplant, cauliflower and tomato sauce

  5. Bake for 30 minutes at 350°F/175°C, cover with diced mozzarella and bake for 15 more minutes, let sit for 5 minutes

  6. Enjoy. Do it, natch!
