Coarsely chop onions and soak in water for at least 10 minutes; wash, dry and cut chicken breasts in little bites
Sizzle drained onions in 2 tbsp oil over medium heat for 2 minutes, add chicken bites and sear for 5 minutes; reduce heat and add green beans, tomatoes, mushrooms, black pepper and cook for another 5 minutes, let cool down
Add lettuce (washed and drained), diced avocado bites, carrots (washed and grated), 2 pinches of salt to chicken-mixture and poor over half side of the crepes, fold crepes together
Enjoy. Do it, natch!
Serving suggestion: serve warm and sprinkle with pepitas or pine nuts!
